Does anyone want my cat? He ate the sauce!

Make it bake it or fake itThis is a simple dish that is great for when you want something fresh, filling, and warm. It fills the house with the kind of smells that remind me of Sunday dinner at my parents’, but without the huge mess and fuss. It’s a great meal that you can scale it up or down easily.


  • About 1 oz per pound of pasta (but really to taste) Balsamic vinegar
  • Small pinch of salt
  • Small pinch of pepper
  • One Roma tomato per person, diced
  • Spaghetti – follow the servings on the box if you’re unsure or new to cooking pasta
  • About 2Table spoons of Extra Virgin Olive Oil
  • Two cloves garlic, unless you’re shy about garlic, then stick to one

Start the water boiling for the pasta, some people like to add salt I don’t in this case. While it boils, slice and dice the tomato (or tomatoes if you’re cooking for more). Slice the ends off of the garlic cloves, crush them with the back of your knife and then remove the peel. (Side note: lemon juice can remove the smell from your hands later). Mince the garlic further if you don’t like strong garlic flavor. Put the olive oil garlic and salt into a container with the diced tomatoes. A big bowl works best so that all of the ingredients can mix and meld. When the pasta finishes cooking, drain it and toss it with the ingredients in the bowl. Add the vinegar and toss it again. Top it with some fresh basil, cracked pepper and sea salt for bonus points.



As the title states, I didn’t get to enjoy this because the cat jumped up on the counter while I was doing some wash and ate the ENTIRE sauce.
